“Silver needles with white down”: buds alone, no leaf. White tea is barely processed at all. The nose is meadow herbs, nettle and clover; the taste is fresh with a faint sourness. A calm tea for unhurried talk and for hot weather. We brew it at 70–75°C, no hotter.
